Brooks Walker is a husband, father, baker, cook, writer and photographer known as Cakewalker from the popular food blog and the dessert specialties he has created for his custom cake business and on the web.
Brooks baked his first cake at the age of eight. His love of food led to his first taste of the industry at age 14, where he was hired at a local Italian dinner house in Long Beach, California. Since then, Brooks stayed close to the food service industry amassing over 20 years of experience in both front and back-of-the-house positions at various food establishments. After completing community college, he spent an additional two years in California State University at Pomona’s Hospitality Management program. His schooling led to a position as a garde mange at the famed Ma Maison restaurant in Los Angeles, where he gained training in French cuisine. A subsequent line cook position with Marriott Hotels led to an entry-level management position where he earned a Marriott Corporation Food and Beverage Management Training certification. Brooks garnered additional management experience by holding several food and beverage positions for various corporate and independent establishments in California, Arizona and Utah.
Brooks eventually left the hospitality industry and pursued a new career as an on-air radio personality where he lent his voice to various music formats at stations throughout California. He furthered his broadcasting career by working as a Commercial Voice-Over artist where he voiced national commercials for clients such as Ford, Logitech, RealtyOne.com and Red Robin Restaurants among others. Brooks also appeared on-camera in several television shows and feature films.
After becoming a father and stay-at-home dad, Brooks attained certification through the Wilton series of Basic Cake Decorating courses. He used his newfound baking skills to garner several First Place and Best of Show awards at several regional county fairs in Northern California, as well as the prestigious California State Fair for his elegant desserts. He was also a Top Finalist in the First Annual Los Angeles Times “Battle of the Burgers” contest which enabled Brooks to show his skills for the savory side of his work.
As for his writing, Brooks has been a Featured Wine Columnist and Photographer for the Folsom Telegraph, and a Music Reviewer for SmoothJazz.com. His blog Cakewalker, photographs and desserts have been featured in various publications including Cake Central Magazine, Los Angeles Times, Sacramento Bee, Orange County Register, National Public Radio (NPR), Calgary Herald (Canada), and The Pioneer Woman. His work has also been featured by other food and wine sites including Mumm Napa Valley and Point Reyes Farmstead Cheese.
Cooking is one of Brooks’ life passions and his byword is: “I believe we eat with our eyes first. But while a dish may look great, it is imperative the food tastes great too—otherwise the experience of eating it is just an illusion. I carry this belief with every food and dessert I make.”
