The New Year brings new features for Cakewalker. One of which is the addition of how to andtutorial posts. Some of them may have accompanying recipes; others might simply be photo-driven techniques. You’ve all been so graciously supportive of my standard story, recipe and picture formatted posts (not to worry, they won’t go away), I thought you might enjoy reading and learning about skills to help your own kitchen explorations. I’ll be up front from the start: Some of the skills might be ones I haven’t used in a while, but we’ll tackle them together and have a good laugh along the way. Sound good?

There’s no denying that Super Bowl party food is a sport in of itself. Whether it’s making it or enjoying the eating of it among family and friends, this day is about food that will score big with your guests. If you’re hosting a get together, consider making these cupcakes. They’re just a bit more involved than baking cupcakes with a simple frosting application, but the effort is paid back in kind by the enthusiastic cheers of your company.

No time to bake? No worries. Employ one of your baking friends! Everyone likes to feel included, and how many times are you asked if your guests can bring something when they’re invited? You’re the team captain—call your most valuable players into the game.

 

THE METHOD

My recipe for the cupcakes and frosting follows the photo pictorial below, but the design of the decorations is my spin inspired by ones seen in Family Circle magazine. You are welcome to follow the example here or devise one of your own. Most importantly, have fun! Believe me, the positive energy you put into your projects will transfer to your finished product and its recipients.

 

Cakewalker Step 1  - Frost the cupcake

The icing bag is fitted with a #233 decorating tip.

 

Cakewalker Step 2

Hold the decorating bag over the cupcake perpendicular to the surface. With the tip barely hovering above the top, squeeze gently to start a flow of frosting, release the squeeze and lift off. Repeat this motion until the surface is covered.

If you’re using a #14 star tip (see option below) the same process applies.

It will just take many more applications.

 

Cakewalker Step 3

Using white frosting fitted with a #2 round tip pipe a vertical “yard line” across the top.

 

Cakewalker Step 4

Now add yard line numbers just like you see on a football field. You can straddle the numbers across the yard line as I did or place them on either side. Your choice.

Don’t forget to place a chocolate covered almond “football” where you want on the field.

You can add detail to the football off of the cupcake. But then you’ll end up chasing the little guy around the work surface as I did. Placing it on the cupcake first holds it nicely in place.

I haven’t picked up a football in years. I think they have 5 stitches. Mine have four. To the eye, however, odd numbers look best.

A rhythm will ensue as you move along the process and before you know it you’ll be done. Present the finished cupcakes in accordance with the theme of your table or the team you’re a fan of.

CHAMPIONSHIP CHOCOLATE CUPCAKES

Yield: Approximately 24 cupcakes

CHAMPIONSHIP CHOCOLATE CUPCAKES

These football-themed cupcakes are easy to execute and delicious too. Serve them at your tailgating event, party or gathering for an extra special touch. Your guests will likely vote you MVP!

Ingredients

    Cake:
  • 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
  • 1 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/3 cup strong coffee
  • Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon (pinch) salt
  • 2 tablespoons milk, plus a few additional drops (if needed)
  • green gel food color
  • Decoration:
  • Chocolate covered almonds
  • #233 decorating tip, or a #14 star tip
  • #2 round tip
  • decorating bags for frosting

Instructions

  • Preheat the oven to 350°F.
  • In a large bowl, add the butter and sugar; cream together using an electric mixer until light and fluffy. Add the vanilla and blend well. Add eggs, one at a time beating well after each addition. In a separate bowl, stir together flour, cocoa, baking soda, baking powder, and salt. Scrape the bowl. Add flour mixture alternately with coffee to the butter mixture, beginning and ending with the flour. Blend until just combined. Scrape the bowl one last time. Using a muffin pan lined with your choice of baking cups (cupcake liners), fill the cups with the batter until they are two-thirds full. Bake for about 20 minutes until toothpick test comes clean. Cool completely on a rack.
  • Prepare the frosting by placing the butter in a large mixing bowl. With an electric mixer on low, beat the butter a couple of minutes. Add half the powdered sugar, salt and vanilla. Engage the mixer slow and easy until the mixture comes together. Add the remaining sugar and milk, starting on low speed until incorporated. Increase the speed to medium and continue mixing for several minutes until well blended and fluffy. Divide the frosting by placing one third in a separate bowl; set aside. To the bowl containing two-thirds, add small dabs of green food color gel at a time, blending it in well, until the desired shade of green is achieved. If the frosting is too stiff, stir in a few drops extra milk. Transfer the green frosting to a decorating bag fitted with tip #233 (multiple opening tip commonly used to pipe grass), or a star tip. Transfer the white frosting to a decorating bag fitted with a #2 circle tip.
  • With green frosting pipe the tops of cupcakes to completely cover with the appearance of grass. Use the white frosting to pipe yard lines and numbers on the grass and stitching on the chocolate covered almonds. Place a decorated almond on top of each cupcake.

Notes

When the batter is precisely portioned, you should be able to get 24 cupcakes. A #16 ice cream scoop (1/4 cup or 2 ounce capacity) makes easy work of this and can be found at restaurant supply or specialty kitchen stores. The icing tips specified are readily available in the cake decorating aisles of craft retailers or online. If you prefer a thicker application of frosting, apply the green with a spatula first as you would normally frost a cupcake, then go over it again using the grass tip.

  7. Brooks, I still remember that day in cake decorating class years ago when we made grass. That tip instantly became everyone’s favorite. Love your footballs too! I must say my piping bags and tips don’t get out of the drawer very often these days, but once in a while I get in the mood. Great recipe! Too many cake decorators spend all their time and effort on the decorating and just resort to cake mixes!
