I’m thrilled to share with you a dessert recipe which can be completely prepared outdoors―a cake baked on the grill! The classic upside-down cake gets a California cuisine twist with vibrant sweet and savory flavor profiles.

      You betcha, Jamie. You can use the same skillet, baked in the oven and at the same temperature. You may also use a 9X2 or 10×2 regular cake pan (round or square). The key is making sure the pan sides are at least 2 inches high. If using the 9×2, you might not need to use all of the batter as you’ll want to leave some head room for the cake to rise, and consider spritzing the cake pan with a non-stick spray. I’d love to hear back if you give it a go, and thank you for the compliment!

      Jean, remember to use the indirect heat method, and use a temperature gauge to keep tabs on the internal heat. Best wishes, my friend!

  13. What a cake! I enjoy each element of this cake and what it brings to the table. What a unique sensation each bite must be!

  14. At the risk of dating myself, this is one heck-of-an update to the pineapple upside-down cake of the 1970’s! My Mom used to make that for us and I remember the delicious chewy caramel created by the sugars beneath the fruit. Peaches, serrano chili and strawberry is a very sophisticated combination and I can’t wait to read about it in your guest post.
